An Egg-cellent Start to Your Day

Oh, eggs…how I love thee!

As you know, eggs have been given a bad reputation over the years as warnings surfaced that the cholesterol they contain was bad for your cardiovascular health—the nerve!

While the yolk of an egg does contain cholesterol, studies now show that 70% of people who eat eggs regularly have NO elevation in cholesterol. In fact, eggs have been shown to increase the body’s level of high-density lipoproteins (HDLs)—the good kind of cholesterol you want circulating in your arteries. Add to this benefit that they’re low in calories (one large egg= 80 cal.), an inexpensive source of protein, contain numerous other nutrients (vitamins and minerals) and, as I already mentioned, are super yummy and satiating, why wouldn’t you make them a regular part of your diet?

Three times a week I prepare myself an egg-based breakfast. Sometimes I eat them fried (in olive oil), other times I might have them hard-boiled (undercooked a bit for a slightly runny, better tasting yolk), or baked into a frittata. But one of the most satisfying ways I enjoy eggs is when I scramble them up with other tasty and healthy ingredients I have on hand.

Need some inspiration to get out of your breakfast slump, or to actually get yourself to want to eat breakfast in the morning? Here are some of my favorite combos—though the combinations of ingredients which can be scrambled into eggs is nearly endless!

Greek Scramble

2 eggs, scrambled with a bit of S&P

Chopped fresh spinach, wilted in the pan before adding eggs

Feta cheese, ¼ cup

Fresh chopped dill

Italian Scramble

2 eggs, scrambled with a bit of S&P

Diced tomatoes

Mozzarella cheese, ¼ cup

Fresh basil, chiffonade (rolled and thin sliced into strips)

Mexican Scramble

2 eggs, scrambled with a bit of S&P

Cubes of avocado

Cheddar cheese, ¼ cup

Scallions, sliced

Hot sauce, just a dash scrambled into the egg mixture
