This Saturday the United States will celebrate its independence from England with fireworks, marching bands, flag waving, and of course, backyard barbecues. So in keeping with the upcoming festivities, I thought I’d give you my spin on a red, white, and blue theme that you may want to offer to those you plan to celebrate with.

RED- Today is the day to indulge in watermelon. I used to dismiss watermelon as being all water and no value. Today I know that watermelon is as nutritious as its flesh is red. Teeming with vitamins C, A, and another anti-aging/cancer-fighting component called lycopene, this is truly a fruit on a mission! So help yourself to a hefty slice.

WHITE- Everyone loves a good macaroni salad, and now you can have one without all the guilt of refined flour. (This means you don’t have to worry about a sharp spike in your blood sugar.) So enjoy some elbow macaroni with chopped veggies—lots and lots of veggies—and a homemade vinaigrette dressing.

Start the day by adding them into some whole wheat muffins or pancakes, toss them into your fruit and green leaf salads, or serve them for dessert with a small dollop of whipped cream.

By filling your holiday with these good-for-you RED, WHITE and BLUES, you will join the United States in remaining independent—from the healthcare system—far into your sunset years.
